Maria’s Roast Chicken Thighs

The wonderful Maria often prepares her roast chicken thighs for special family gatherings. Infused with fragrant rosemary, sage, and garlic, this dish embodies the warmth and love of home-cooked Italian cuisine. The night before, she marinates the chicken, allowing the flavors to develop beautifully for a tender, juicy result. With just a few simple ingredients and easy steps, Maria’s roast chicken thighs become a centerpiece of cherished moments around the table. She says that the daughter’s family really loves them, and that she only eats the thigh because it has more flavor and is more tender.

Ingredients
-
4 chicken thighs
-
1 rosemary sprig
-
A few sage leaves
-
3 garlic cloves
-
Salt
-
Pepper
Method
- The evening before cooking the chicken, prepare the marinade. Crush a few cloves of garlic, along with the rosemary and sage, adding salt and pepper. Rub the meat with these herbs and let it rest in a dish in the fridge overnight.
- The next morning, the meat will have released some juices that will be used for cooking. In a non-stick pan, cook the meat with the herbs and its juices, along with a bit of olive oil. Cover with a lid and cook on very low heat for 20 minutes.
- At this point, preheat the oven to 180 degrees Celsius, then transfer the pan to the oven, adding a little white wine, and cook for about 15 minutes. This way, the chicken thighs will be very tender!

Tagliatelle is one of the simplest pasta to make and a staple of Emilia-Romagna; everyone knows how to make it! Growing up, my grandmother used to make the most delicious ragù and homemade tagliatelle, filling our kitchen with the comforting aroma of simmering meats and fresh pasta.

This is my easy-peezy, chuck-it all in tomato sauce. you can use fresh flavoursome tomatoes in summer but in winter it’s better to use tinned whole tomatoes.

A simple but classic recipe—there’s nothing more classic than aubergine parmigiana. It’s the only vegetable dish, especially with eggplants, that I can get my partner to eat.
