Grey cheese and butter from Südtirol

Formaggio grigio (Graukäse) is a traditional skimmed milk cheese from Val Pusteria. We meet Andrea who makes it by hand at her farm, Oberhof. She recommends eating it with apple cider vinegar (especially sheep vinegar) and seed oil. During the visit, butter-making was also filmed alongside the cheese production. Enjoy!
