Sauerkraut production in Northern Italy!

In this episode of Farm to Table we visited lovely Emma at the Peterer farm in Rasun di Sotto (Anterselva). She showed us how she makes sauerkraut, a fermented shredded cabbage. Emma used a specific tool for slicing the cabbage, and even though it may look easy, it’s not! We personally tried and let us tell you, it was a proper workout!
