Concetta is 93 years old; although she was 92 when we filmed her rustling up these crescentine flatbreads for her family's lunch - there were 12 of us. She still makes pasta every day - usually for other people in the village, who in turn are always dropping by to see how she is. Her vitality and independence is something to admire and marvel, while her crescentine are delicious. They include strutto, or lard, by the way. In these moutainous areas, traditionally the fats used in cooking are pork fat and butter; olive oil is a relatively recent development. My theory is there is such a thing as the Mediterranean Lifestyle, not Diet. Folk achieve an active old age by remaining very active all their lives; eating frugally (everything); and being plugged into their communities, church, and family.
